This has to be my new favourite buttercream flavour. It is simple to make and tastes delicious. I have used this on a coffee and chocolate cupcake but it will go well with plain chocolate or a nice vanilla. You can experiment with different combinations, have fun!!
250g of unsalted butter
500g of Powdered sugar
2 Tbsp Baileys Irish Cream
Whisk butter for about 5mins on medium speed till its a lighter shade than what you started off with. Add the sugar in two batches till fully combined and lump free. Pour two tablespoons of baileys into the mix and whisk for another 2 to 5 minutes till its fully incorporated. PS if you would like your buttercream a little stiffer then add more sugar or use less butter.

Here is my 1st cake of the year, I promised to put it up and here it is. This was loads of fun to make and oddly enough it wasn’t as time consuming as I thought it would be. Its red velvet inside with delicious cream cheese frosting.
Ice Bucket cake
I hope to be much better this year with posting on here. I have a lot to say and a lot to share. I have already made a fabulous Ice bucket cake which I will be sharing with you soon. It has really started my cake making year off with a bang. I met up with my pianist last weekend, hopefully I can make some videos soon.
I was working at a bakery thinking that I would be able to learn a few things about cakes. I barely learnt anything because they mainly baked fresh bread and ordered in 80% of their cakes from wholesalers. I was stuck there making and serving sandwiches, stocking the fridge, refilling trays and working the till. I decided to take a cake decorating classes because I could bake the cakes but my decoration was poor. I registered at Lambeth College for a beginners course. We learnt all the basics like making piping bags, making royal icing, making fondant roses, simple piping making fondant teddybears and covering a cake in fondant. I absolutely loved it but at the end of the 3 months they didn’t bring the class back. Thats how it all started and I haven’t stopped decorating since then.
Here is the 1st cake I decorated properly at the class.
I love the little teddybears, they were fun to make.
Anyway thats how it all started.
